Here's mine, pretty much just a mountain. I have a sliver of space on the back.

The dreaded wall-o-rock in mine. I originally had this 75 lbs of rock (it's very light, too, so it's a LOT of rock) in a 38 gallon years ago (same as the 55 but 1 foot shorter). I got 15 more lbs for the 55, and fortunately ended up buying a larger sump than it came with, so I got to move more down to the fuge. I'm not sure I'll know what to do with a 125 or 210 when we get one LOL!

    First round.

Now, with a lot of the stuff from the right now down in the fuge. Still a wall-o-rock tho!

All my rock is too wide to shape in any pattern LOL.
Sounds like a good plan, though.

I'm a big fan of gluing the rock together to get what ever shape you want. I did a few a while back and am pretty happy with them.
