Are they toxic if left too long in the tank? do they cause any levels to rise like amonia for example? I had a snail and it was about the size of a golfball or bigger. It didn't move for 2 days and I decided to check him this morning brown ...looked like smoke came out when i moved him and I knew he was dead...smelled bad too.

SHould I have left him for others to eat or was i better off throwing it out

It is a dry heat, yeah right !
Really depends on the size of the tank, and filtration, but if there is any tissue left I would just remove it and check parameters in a small tank, like anything under 40 gals.

i would definitely throw it out and do some water changes to get rid of the ammonia.
