Ok so lets say I have 5 10 gal tank setup side by side,I understand how to plumb all the drains into 1 sump.... But how do I use 1 pump to return the water back into all 5 evenly?

Just split them off with Y adapters and use ball vales but matching 100% even is hard. It's better if all at the same level.

Create a manifold by connecting Ts together and then using ball valves to control the flow to each tank. An alternative since you have them side by side it to connect them together and and drain from one end and return to the other end.

but wouldnt the ball valve just restrict flow to the 1st tank ,and not allow anything to reach the others?

A ball valve is placed after the T on each line.
