I'm trying to figure out plumbing for my 75G DT, and I was wondering if this set up would be good and what size pump I'd need to push enough water for good flow.

The tank has a center overflow.

You're drawing is a bit confusing....which way does the water flow? Clearly indicate which is the return and overflow. Looks like one return line with no overflow or vise versa

Use any pump, but make sure it's output is LESS than the total flow of the return.

I like the Marineland series- I use the 5500.
Always restarts in a power off, and is quiet, and it's Italian!

They make other sizes also- can be external or in sump. Mines in the sump.

A Mag 9 would be another good choice.

Sorry the pic is sideways.. its an over flow box which will have 2-3 holes for return water.(bottom of tank)
