I think you made some sence. You want your scape to look natural? Here is my 75g. I went with two islands, I was trying to get away from the rock wall I had in my old 55g.

it looks pretty good.. sadly i cant really do that as i have 2 corner overflow boxes..
i kinda want more of a full looking style. that gives me a lot of caves and ledges.

I found in order to get a good depth in your rocks (meaning ledges and such) it is always good to strat with your big rocks on bottom and progressively reduce to smaller ones as you get near the top of your pile. This creates a aquascape that creeps in as it gets taller. Also, space some of the bigger rocks on bottom out and use flat, long pieces to create what I call bridges or ledges. Then you can leave these areas open to place coral on or pile more rock on top of the bridge to give the illusion of a cave. Also, try to locate some tonga live rock. This is the branching live rock that you see holding up a good amount of rock in the middle of my tank. The cool thing about the tonga rock is that it makes it real easy to create caves and such because the live rock is branching.

For your tank I see no problem with taking all your rock out and redoing it. Just slowly remove piece by piece so you dont stir up too much muck and to make sure no creatures are in the rock. I would plan on doing this at the same time as a water change. The idea behind this is that you can use the water you took out to rinse the rock as you pull them out so that when you place it back in the tank you dont make such a cloudy mess.

Of course I forgot to mention that this will only work for rock that is not covered in coral obviously. Unless you got a tub or something filled with some water. Otherwise the fish and such will be just fine.
