I just received my ro/di filter, hooked it all up and its running smoothly, since im the most paranoid person on either I want to double check to make sure the water collected is good to go! What types of things should I be testing the RO water for to make sure its good to use?

    I have a bulfreefsupply 5 stage plus,

I think you need something called a TDS meter

Inline TDS meters have a few drawbacks but are a good quick check even if not as accurate as a handheld. I use both but prefer the handheld for extreme low end accuracy. You may want to check your dual inline meter probe locations too, I have had several people tell me their IN probe was on the tap water and not the RO only water which is not good. You want the IN probe after the RO membrane and the OUT probe after the DI so you can monitor both membrane rejection rate and final RO/DI TDS. Knowing the tap water TDS is nice but really as critical as knowing if your membrane is failing.

TDS or conductivity/resistivity is really the only measurement you need as most other test kits we would use for this hobby are not accurate in ultrapure water.

I kind of understand what you're saying, im just confused with the "IN and OUT probes" What are those? I have it from my tap, to my ro system and then to my di canister which is the last step to my system. Im a complete noob to this sorry -.- When I turn on my TDS the IN gives me a reading of like 3? and OUT is 0

Your "IN" TDS is the water before the DI chamber but after your RO section, the "OUT" is the water after the DI chamber.

If you are reading 3 on the IN probe its got to be correct after the RO membrane and the 0 TDS is after all treatment or post DI with the OUT probe. Thats the way they should be and it sounds like your RO is doing good with a TDS of 3!
