depends to a great degree on the bio load, feeding regime and if you have any chemical filtration in place as certain chemical media can compensate for lack of a skimmer IME.
not that I would rely on it as a full time method, I still enjoy my skimmer to much for that.

with a low stock reef tank and a sensible feeding regime, then it go go skimmerless for a long period - 6 months was the longest I went skimmerless in a tank full of softies and very low fish stock

with a well stocked tank - most notably fish - then water quality can drop if your not skimming

but IMHO - if you are away for a couple of weeks and you turn off your skimmer, then your not going to have a problem with your present stock capacity Puffer Chick

Blumoon reefers - based on your signature- the same statement applies to you for your weeks holiday

thanks for the info! i've cut my feeding down to once every three days instead of every other day. it's probably going to take me a while to get my credit card down, i would really love the deltic :D as i just dont think i'll be able to get my skimmer working properly, but who knows, tomorrow i'll reply to reef octopus with my problems

I would like to propose another potential cause for not needing to top off. I'm not sure about your exact setup but a lot of skimmers maintain some water above the water line of the sump/tank so when you turn them off the water level will rise because that water will go back into the system.

Depending which skimmer/setup you're using this could be quite a bit of water, I think my Octo Extreme 200 has 1-2 gallons that siphon back to the tank when I turn it off which isn't a huge amount on a 120g system but it would have more of an impact on a 75g, just as an example. I would doublecheck your salinity to be sure you didn't basically just add a bunch of saltwater to your system by turning off the skimmer.

Does that make sense? Of course it might not be the case but thought I'd bring it up.
