Full spectrum is the way to go in my mind also.
Going without a skimmer for a day is no problem. With your other filtration a week wouldn't be a problem.
Definitely on the rocks. They live their life on the rocks and they will want to attach themselves to rock for security.

You have plenty of light. Put the clam on a level spot on or near the top of your rocks if it is a maxima or crocea.

They should do fine. You need to know that the starfish will most likely waste away as out tanks do not have enough food to feed the star long term....
The refractometer needs to be calibrated with a 36ppt reference solution. RODI water leads to inaccurate readings.

Pull each rock out and remove what you can and replace.
Scarlets are more active at night and they are more thorough in their ways.
You could do it daily if you make sure the SG, Mg, Ca and alk match the water in the tank currently.
