20 ppm nitrates is not that bad, unless maybe you're trying to keep SPS or something. If not, stop panicking over it!

Live rock is live because of the bacteria, so you're not going to see signs of that except with an ammonia test kit once the cycle starts/finishes.
I've never had any trouble with them taking empties from the LFS.
