i wouldnt try to hold as long as possible, as you have your 55 as a reef and it will quickly amount a ton of biological wastes, nitrate will spiral...

Yes its true, salt stays in tank when water evaporates. Thats why Auto-top-offs can be used on saltwater tanks ;) BTW what part of NJ are you from...
