Who is "they". I have never heard any instructions recommend adding a live fish to introduce ammonia. There are better ways to start a cycle....
I have to respectfully strongly disagree with this method. You should never cycle with live animals. I wouldn't even add a CuC until a tank is cycled.
Raw shrimp is what most people say to do. I don't know if it is right or wrong, but a lot people also pull it out once it starts to decompose.

Yes and no to this. This is all dependent on what size system you have. If you have enough LR to handle the new bio load, you won't see a cycle....

If he has nitrites already though, he wouldn't need an ammonia source. You could use some Microbacter7 or Dr. Tim's product to help cycle though.

Salifert makes a good test kit. I have used API and Red Sea as well. I hear Hanna Checker's are the best though. I have never used one though.
