A higher salinity may help keep the Mag. in solution but it shouldn't be necessary to raise it any higher then 1.025. A week may not be long enough...

Clownfish don't host anemone's.Anemone's host clownfish.;) Never had Clarkii's.:-/ You can never tell what a clown will choose as its host.
How long has it been cycling and what method did you use?? Nitrates are high so I would do a change.

Dieing coral can indeed cause ammonia to build up but I agree with Cheryl and its probably a symptom not the cause.:(

Skimmers need some time to break in but it just sounds like your water is clean.
You will probably have a hard time placing them without turning the tank into a snowglobe.A coarse substrate will help.
Strong lighting is probably the issue.
