what size Sump and fuge would you guys think would be good for an 80 gallon reef tank? Also a 100 gallon FOWLR tank?

as big as you can fit under you stand.
standard tank sizes probably 40 breeder if it fits in the door.
custom made like i said as big as fits.

Here is a picture of my 20g long. The far end is a 12"x12" fuge. I run a 90g reef tank with 2 overflows out of this.

Now.....when I built this, I thought there was going to be enough room easily. However, now it is full. I cannot fit anything else into it. So if I need any more powerheads I am going to have to consider a 30 gallon (36" length compared to the 20g's 30" length).

What I have in there is the 12X12 fuge, an ETSS skimmer, heater, Mag 9.5, two Rio 2100 plus powerheads and a mechanical filtration unit hanging over the front to run carbon.
