I currently have a 90 gal DS with a 30 gal sump/fuge. I have an old Fluval 204 canister filter that I used to use with a 40 gal salt tank about 10 years ago, does it make sense to use in in my sump anywhere? I hear about people using carbon to "polish" the water once in a while. Would I be best off using my canister to do that or am I better off using carbon directly in the sump? Any other uses for my old Fluval besides a doorstop?

You can use the fluval for both mechanical and chemical filtration. I have a 205 that I use right now and will use when I complete my new build. Just don't use the foam. I use filter floss and change it weekly.

The canister will allow for less flow by of the water.

Woud I be best to run the canister out of my last sump chamber, where the protein skimmer is? What would be the best type of media to put in the filter? Carbon? I'm not sure what phosban and purgien are?

Phosban is a phosphate remover and Purigen is a protein remover.

I would run where the water first enters.

Use carbon and granulated ferric oxide (GFO). GFO removes phosphate.
