I currently have a T5 set up but am moving the tank and looking to upgrade to LED. As of right now I plan on just having FOWLR and some zoa and softies higher up in the tank. Would I be able to away with 2 or 3 BoostLED PAR30 Reef Lamp?

Yes. In fact, 3 should allow you to keep higher-light corals near the top if you want, with softies, zoas, mushrooms, etc from middle to bottom. I've seen colorful Acros in smaller tanks lit with a single PAR 30 lamp. Been thinking about 1 for my 29H softy reef.

My tank has a bar and glass in the middle. How would I position that one?

I had 5 par38's on a 3ft 65g and I could of used a few more. 3 par30s will definitely not light a 75g. you will have 3 hot spots and then really dark areas. 15 leds over a 75g wont cut it.
