I added chemipure a few days ago to help since everyone always says how great it is.

My cuc is minimal since I only had about 8 lbs of rock in it until I added 40 lbs of dry rock. I have 2 hermits an emerald crab and about 4 snails

Stirring your sand is going to do nothing but make it *look* better. Be patient grasshopper this to shall pass :)

Does chemi pure or chemi pure elite absorb phosphates too?

Chemipure elite absorbs phosphates and silicates, I added a bag a few days ago and my phosphates are way down but my diatoms are still there...

It won't remove the diatoms ;) but it will help by removing the silicates, which diatoms use. You can manually remove them also. But doing so from your sand bed means you'll be removing more sand then you want. Once their food source has been removed they will die out.
