    Can someone tell me roughly the age at which a Desjardini Tang begins to mature and change to his adult coloration?

    I've been told that maturation in fish varies quite a bit from specimen to specimen, but that in general it's a process that starts at 6-12 months and can last 2-5 years before they're fully mature. I don't know if your tang is an exception to that rule, but it probably isn't.
