I really like the magnificent fan and the flaming prawn goby, but they are very small for a 75 gal... Are there any really cool shrimp gobies out there that are big enough to see?

I have a pair of Yashia's in my 75g right now. I love them, very pretty fish.
I would make sure to get your goby in first to let them get established. They aren't very aggressive feeders at first so letting them get acclimated to the tank first is a good idea IMO.
I only have the gobies in the tank right now so we'll see how they fare once I get some other larger fish in there but I imagine they'll be just fine.

They are on the smaller side but not the smallest shrimp gobies. Mine are close to 2" I think but my tank will be mostly smaller fish all <=5" approximately.

It depends what other fish you have in your tank and how your rockwork is setup though I'm sure.

All shimp gobies are small, that is part of their appeal.

I have the aurora goby (also called a pink bar goby). He is pretty big and cool to look at. Great personality!
