OK. I have a question! When do i perform my first water change? My tank is eight weeks old. No Ammonia, or Nitrites and very low Nitrates.

Most do it after the first cycle. About where you are now. You just have to decide how much, and how often, then stick to it. I do 15% bi-weekly.

3 gallons weekly would be just over 10% Crusty , that would be a good place to start IMO
or if you want to do 5 gallons ( mixing or bucket size convenience) then once every other week would be a good option

monitor parameters and make adjustments to the schedule as required
