I use a cheap pocketknife with a thick blade. I place the blade where I want the cut. I take a small hammer and gently tap the blade a few times. The vibrations will break the bone along the fracture caused by tapping the blade with a hammer. Very easy to do. You will damage a few heads, but they heal fast.

A hobby knife is very thin. It will not transfer the vibrations properly because it will flex and possible break.

You need a dremel with a diamond cutting wheel, a diamond band saw, or a wet saw with a diamond blade. You can easily do it, you just need the proper tools.
