I have a green leather that for several weeks was big and always had it's polyps out and looked great. I was away from home for a day (a full 24 hours) and when I returned, I had had enough evaporation that one of my pumps was pumping air bubbles into the tank - don't know for how long, but probably for a couple hours at least from the looks of things. Ever since then, the leather is not opening up - been about 5 days now. No polyps open or anything. He's kinda shrunk up too. I know they "close up" when disturbed, but this seems like a long time. My water parameters are fine and all the other corals seem to be fine and opening and such. I know that leathers "molt" too, don't they - could that be what's going on? Any thoughts?

Chance are that your leathers are closed because they have mucus covering it. All leathers slough periodically usually as a way of removing detritus etc. After a while the mucus will come off allowing the leather's polyps to once again open up. Try upping the water movement on your leather's as they require moderate movement!
