    has anyone used alum diamond plate x2 with a bolt between them as a heat sink for there leds .

    That'd be a very inefficient heat sink, and would probably lead to the demise of the diodes via thermal failure.

    Why not use a real heat sink? Heat sinks are all about maximizing surface area, as they cool via convection. The little diamonds will not achieve this.
