Ok, so I went to test my water this morning and:
    Ammonia:0
    Nitrates:5
    Nitrites:5.0 ...

What could be causing my massive spike in only nitrites?

Are you missing anything you normally wouldn't notice like cleanup crew? Did you put in any LR recently? Just sounds like you had some death in the tank, whether it be a snail or die off and the mini-cycle just needs to complete.

Just the 1 hermit that went missing yesterday (I had a thread about it, I think you posted on it). I did recently add BASE rock, but not LR.
I test everyday, shouldn't I have seen an ammonia spike before this, or not necessarily?

any time you add rock and stir the substrate that is going to happen it should go down quickly.

Okay, that makes sense. I did give the sand a good stirring during my aquascaping. But this high of a level is still normal?
