I read that you can aim a powerhead at a mushroom and it will eventually get uncomfortable with the flow and unattach itself, but I have a rock that about 12 mushrooms came on and I only want to get one off. Anyone have any suggestions?

exacto knife and scrape underneath along the rock! Get it all or it will grow back!

you could just chip off a piece of rock with it...or take a razor and cut as close to the rock as possible....the flow probably wont make it peel off but jut move a bit
