Ok, the possibility of me screwing up the bacteria is very real, since I still don't have a skimmer, freaking thing still on its way to me...so it's now been 3 weeks with no skimmer, so I must ask, should I add the stuff you recommended yesterday to aid the now, possible dying bacteria? by stuff I mean seachem's stability. Thanks again dude.

wouldnt hurt to add it. I use it in everytime I start a new tank to kick start the bacteria. What are test results on the tank so far?

According to my Red Sea Marine Lab (if it's any good) the results are as follow: (bare in mind that this colors are kinda confusing)

    pH 7.8
    Alk 3.0
Nitrate High Range 100 Low Range 20
    Amonia 0.25-.5
    Nitrite 0.5-1.0

ph needs to come up a bit, so your Ca or Ma is off.

So, at this point, do I let it cycle a bit more or do I add some stuff to the water? keeping in mind my tank's 3 weeks old now.

buffer it to 8.0-8.3 and possibly add some stability just in case. Then let it cycle.
