    So I made some Lobster Rolls today. It's a very simple traditional recipe. Good like crazy.

    So a spectacular way to cook lobster is to poach it gently in butter, slowly, so the meat doesn't toughen.

    Stuck a couple of wooden skewers in each tail too. This keeps them from curling up once the muscle begins to cook.

    Heck, if you have butter, you can't throw it away. Might as well use it to grill the buns.

    Nice, my uncle dives down there and I love the lobster tails he brings up here from time to time. Me being from new england there is no substitution for fresh maine lobsters, but these sea roaches come in at a close 2nd.

    True. There's nothing like a Maine. We call 'em bugs here in FL. They're technically crayfish, but they're mighty tasty!

    those do look good

    closest things we get to those are crawdads.

    i have only cooked them a couple times but we catch em in the river, up at the lake, or in some ponds all the time. we catch them with our hands. you just have to look for the biggest ones you can find (6-8 inches) then you reach from behind and grab them with your thumb and pointer finger right behind their arms with the claws, on the smooth part of their back before the tail starts. they can't pinch you at all when you grab them like that because their arms can't bend enough. anyways its a lot of fun and its really exciting.

    only have cooked a couple big ones before, just boiled and served with butter and lemon

    dang now I'm hungry :D

    anyways nice job
