I'm planning on doing a DIY LED build and have been through tons of forum builds and advice. My question is this; does it matter which drivers you use? I've seen some builds where they use Meanwell drivers and I've seen some where they use Buckpucks. What are the advantages/disadvantages of using either?

Go with meanwells. Buckpucks are usually only the constant current driver without a power supply. They require you to pick a properly sized power supply. Meanwells simplify everything and they are a quality unit.

New question. I have no plans for any type of controller, will just be using a seperate driver and timer to control the blue/white LEDs coming on and off individually. Would I still need a dimmable driver or could I use the LPC-xx-xxxx type of drivers?

Even with the constant current drivers? Thought that was only for the dimmable type drivers.

I guess my question is this; do the Meanwell constant current type drivers need a power source or do they have a power source on-board like the Dimmable drivers?

They need a 110V, 15A receptacle (standard residential). No additional low voltage PS is needed however.
