I had a cycled tank but needed more LR, so I bought some more, put it in the tank and that night my ammonia was 8+. It's been about 4 days like hat now. Now the higher the spike the more bacteria it will create right?

It is a dry heat, yeah right !
Technically yes, but a biological filter is always increasing and decreasing based on available fuel (ammonia, doc.....). The amount will wax and wane as the tank evolves and the bio-load changes.

If you do not provide the fuel throughout the cycle the population of nutrifying bacteria will die back, nothing that some simple fish food added occasionally to the tank will not cure.
