Okay well I am only putting a fuge under my tank because there is not enough space for a skimmer, all of them are too tall. Here is my plan in the image below, should I add another baffle before the return section? The return pump is a eheim compact 160gph.

i wouldnt i am in the process of building one out of a 55 and im adding an extra baffle to get rid of the micro bubbles if theres nothing to make micro bubbles its just a waste of materials IMO, but i would put filter media to keep sand out of the pump to keep it from getting torn up.

Do you think I should take out the second baffle on the return section and have it just overflow over the first one? Also my flow isnt going to be too fast so I think the sand will stay put.

    Yep ;D

Restrict the return, never the overflow.
