Gresham is right on regarding your mantis theory. They are often used as a scapegoat for missing fish by people who know nothing about their behavior/feeding habits. I have a feeling that your fish are dying possibly because you're adding diseased fish or because you're doing too much poking around and rearranging of rock in your tank. By rearranging your rock, you could easily be killing off anaerobic bacteria. You could also be releasing pockets of sulfuric gas into the water. Your cleanup crew (hermit crabs and nassarius snails if you have any) would and could make short work of the dead bodies.
