You dont have to have any Live Rock it will become LR after the tank cycles and starts to age. You can speed up the process buy seeding your tank with some LR from an established tank or useing a bacteria supplement. If you use wild LR you risk haveing pest in the tank, alot of people use dead baserock to start their tanks and slowly increase livestock as the bacteria colonies grow.

how long do you have to wait before you can add the rock to an existing tank? I got 25% of my 125 G that needs some rock in it.

This depends on how you cure the made rock.. it can be aged rather fast.. with vinegar and many water changes I helps a friend to make enough for his 75 gal and I told him to set his in a creek that ran along side his house for about 6 weeks and it was fine. The vinegar soaks just just mellows and neutralizes the caustic alkalies in the concrete faster and with a loy of water changes its a fast way to remove nasties them from the soaking tub. His has been up now since 2000 and is a nice looking reef. The rocks look as good as anyone that use L/R..

Just a quick note to use white vinegar, not the stuff to put on your chips (fries)!!
