Should I oversize my return like I did for my drain? i. e. I used 1-1/4" PVC for the drain with a 1" bulkhead, should I do the same for the 3/4" return line?

I wouldn't. I use 1" pvc for my drain and 3/4" for my return.

Am I the same, the smaller the return the more pressure the water is coming out of the return.

No need to make the line larger than the outlet from the pump. You can gain a few more GPH out of the pump with a larger return line but not really worth the extra cost.

My problem is that my pump output (Waveline DC5000) is 1" barb, so should I hard plumb the return with a reducer bushing?

If your pump output is 1", I would personally run the entire return line in 1". Do not bush it down.

Food for thought:) When a pump is rated at 2700gph and has a 1" outlet can you push 2700gph through a 1" pipe? When you find this answer it will answer your question too.

I don't have a choice, its drilled for 3/4". The pump is DC controllable so I can probably just downtune it.

Ah, I missed that in your first post. Then yes, I would look into decreasing the motor speed as mentioned.
