The live rock I bought ended up coming with one Red Mushroom coral on one of the rocks. since I started my tank 5 days ago the coral has appeared to do very well and has opened up. Since my tank hasn't fully cycled yet will it survive the ammonia/nitrite/nitrate spike? Or should it be temporarily be removed?

Mushrooms tend to be very hardy, it will most likely survive.

+1 it will *probably* survive but you shouldn't count on it. I was speaking with Tangster on the telephone 7 years back or more, he told me and I will qoute "mushrooms are the cockroaches of the reef tank" .... he was right too.
