I know water evaporation will raise the SG.
What would cause it to drop?

or a possibly a huge precipitation of minerals in the tank, that eventually drop out of the water column... which could lower the salinity a little bit, but probably wouldn't account for any major drop.

I cannot think of much on this one. Maybe salt creep over time if you don't put the salt back in the tank. Otherwise, it does not evaporate........You would have to take out water and replace with RO.

Would salt creep lower SG in time if no freshwater was added and you have very little evaporation??

Skimmers tend to take out salt from the water at a higher rate they you would think. Skimmate typically has a very high SG

This can over time lower your tank SG

You ever notice after you had your hands and arms in your tank, if you don't wash up, they become all crusty? That's because the salt sticks to you. You pull salt out every time you put your hands in there.

I'm not saying you're going to see a noticeable drop every time you put your hands in the tank, but if you don't do water changes regularly, over time, this accumulative effect builds up to measurable amounts, IME.

Also, there can be a perceived lowering of SG if you are using a hydrometer and not a refractometer. Just because hydrometer's are not accurate nor consistent.
