From what I've been hearing from others, I'd stay away from the Prism as they are finicky and loud.

A Remora would do nicely and once you set the cup at the right height, they are pretty 'set and forget.' At least mine is. With a MaxiJet 1200 pump it's not that loud.

I guess you could turn it off at night, but the pH in your tank and in the skimmer would drop. Technically for that reason, it would make more sense if you were going to do that at all, to turn it off during the day and run at night.

But that's not what you want! So I say keep it on.

It's my understanding that the oxygen from the skimmer keeps the pH up a bit. At night the pH is naturally lower as algae, plants and stuff that are giving off oxygen during the day absorb oxygen at night and give off C02 and this affects the pH.

So I'd just leave it on. But, that said, if the thing keeps you up at night, I don't think it would cause major harm if it were off for a few hours.

I was just giving you a reason to leave it on.

I did find my prizm to be loud and I do find my Remora to be much more quiet. However, maybe I'm just accustomed the the noises my tank makes.

I personally would run a skimmer 24/7 for the reasons mentioned above but I also understand that sleep is good. :)

What does an accountant who's been through tax season know about sleep?

I agree that 24/7 is best for your tank and in time you'll love the sound of a healthy tank!
