I have a three chamber sump 1st chamber overflow into a filter sock then second chamber skimmer whichs flows over a sponge into return chamber and there was a lot of junk on the bottom of return side. I have heard it can be a good coral food source aka marine snow. So I turkey basted it into display. Was I wrong? Or should suck it out? Or leave it alone?

I do not believe you did any harm
but depends how much is there and how long its been there as you dont want to cover corals with to much sediment

distributing it about the DT is a good idea and as you say, its basically a form of Marine Snow

one good idea is to have a pump set up on a timer in that section and once each night for the pump comes on for an hour or 2, distributing any detritus that settled during previous 24 hours

Tank has ONly been setup two months so it wasn't alot. And I am surprised skimmer did not lose the foam head and did not fill up with wet skimate. I do like the pump idea though although turkey baster did the trick.
