That's what I am worried about too. I haven't built a canopy yet, but I will. The back should pretty much be completely open, except for whatever bracing you need. I don't want light shining out the back, but idk of any other way. :(

If I open the back should I change the direction of the fans? Maybe both sides blowing outward since air will be coming in from the back of the canopy. Or leave them the way they are blowing air across the water?? I'm not so worried about the temp at 80 more of the fluctuation from 77-80 in approx. 8 hrs

Yeah, 80 isn't a problem, just the fluctuation in a short period of time. I would leave them across the water for now. Edit: maybe you could have all fans blowing in, allowing air to circulate through the canopy, exiting out the back?

For now you should be fine. If your temp raises above 80 here are some short-term things to do.

-Ice cubes in a zip-lock bag. I use 6 at a time, for my 29g(You may want to use 10-15 in your 55g). This will lower the tank by 1/2 - 1 degree but will melt in about 20 min. This method works, but is slow and tedious.
-Open your canopy for now, if there is a door/lid on it, allowing for gas exchange.
-Fans can be used to run across the water as we've already talked about.
