I am thinking about getting 3 of these guys for my 40 breeder. I think they are a really cool fish. What do you all think? Is 3 to many?

It depends what else you have in there. If that's all you're planning, than they will be fine.

Right now the tank is empty (Just water sand and rock). I have been watching these fish at my LFS and they seem like a pretty hardy schooling fish. I could add 1 or two more small peaceful fish with them right?

3 Cardinals are fine for that tank.

Odd numbers always seem to work better, and 3 will school just fine.
